If you're like me, you have a tendency to end up with loads of leftover mashed potatoes after big meals (especially around the holidays). The other night inspiration struck, and at 11pm I whipped up a nice treat for hubby to enjoy for lunch.
Fried mashed potato balls.
Yeah. They were really good, and surprisingly easy. You can play with them and make any combination of flavors you desire, but here's what I did:
Ingredients
2 cups of leftover mashed potatoes
about a dozen jarred pickled jalapenos, chopped
1/4 cup of ranch dressing
1/4 cup grated parmesan cheese
2 tbsp minced garlic
1 tsp kosher salt
1 tsp ground black pepper
2 eggs
1 cup panko breadcrumbs
Heat about 2-3 inches of vegetable oil in a deep pan. Mix everything but the eggs and breadcrumbs in a mixing bowl. Beat the eggs in a bowl and set aside. Pour the breadcrumbs into a separate plate or bowl and set aside.
Roll ping-pong ball-sized balls of the potato mixture in the palm of your hand. Dip the ball into the egg, then coat with the panko crumbs. Repeat with the egg and crumbs. After being coated in egg and crumbs twice, submerge in the hot oil, and fry to a nice golden brown, turning if necessary to ensure even cooking. Each ball will take about 3-4 minutes to cook. Set out on paper towels to drain. This recipe yielded 6 balls, and adjustments will need to be made depending on how much leftover mashed potatoes you have. You can also make the balls smaller than I did.
Some good substitutions could include: blue cheese dressing, chives, bacon bits, cheddar cheese, sour cream... the world is your oyster! Actually no, not oysters. That would be pretty gross.
